Cookery demonstrations
Our Chef explains the ingredients, demonstrates the method, and presents and serves the dish with advice about the
right accompaniment. Demonstrations are informal, friendly and students are encouraged to take part in the preparation
of the dishes. Each session includes details of the recipe and a tasting.
Course books
In our course books we give extensive notes on regional cookery and specialities, plus notes on local produce such as
cheeses and wines. A glossary of culinary terms and a list of useful vocabulary in French, Italian or
Spanish is also included with notes on cooking and eating traditions in the different countries. Finally a number of
mouth-watering recipes are included.
French Languauge
The value of these courses is not just in the food technology field. The foreign
language element in both the cookery demonstrations (although we do provide an interpreter) and the programme of food
related visits is extremely beneficial to all students learning French.
Food for Thought Study Course in France
Your group can choose a centre for our Food for Thought course in either the Opal Coast or Normandy.
In St Fraimbault our course is based at the Gîte Bellevue. Our chef, Gregoire, is bi-lingual, having worked in
London. He currently works in France as a chef and cookery instructor and has his own restaurant in St. Fraimbault. Recipes
demonstrated will be based on local produce and include dishes such as local river trout in cider and cream sauce, Camembert and Nettle pie!
In the
Opal Coast groups stay in
Le Touquet,
Camiers,
Stella Plage or
Montreuil. Cookery demonstrations take
place at a local restaurant or hotel. Demonstrations are given on
meat and
poultry,
fish and
seafood, and
patisserie.
Recipes are changed each year. A highlight of the week is the Crêpe Evening.
Sample Itinerary - FRANCE
5 days by COACH Food for Thought course to Northern France
Day 1
Depart school by coach for late morning Dover-Calais ferry crossing.
Continue to your hotel for your evening meal (first meal). Calais to Opal Coast - 1 hour, Calais to St.
Fraimbault - 7 hours, Calais to Houlgate - 5 hours.
Day 2-4
We will arrange a programme for you incorporating three cookery demonstrations and the included
visits indicated for each region. Additional visits and activities can be arranged subject to driver's hours
regulations. Full details of what is available in and around each centre is given in our Equity Travel Guide.
Days 5
Travel to Calais with packed lunches for your return journey. Optional stop at a Hypermarket time permitting.
Cookery daytrip to France with the theme of your choice
Day trip programme
Enjoy a cookery demonstration and visit a Hypermarket on the way back to port. Our cookery demonstration takes place at a hotel or restaurant in le Touquet, Stella Plage, Etaples or Montreuil.
Our daytrip includes
Coach from school back to school and return channel ferry crossing. Coffee and cakes and one Cuisine Demonstration - choose your theme - fish, seafood and shellfish, meat, poutry and sauces or pâtisserie.
Daytrip options
Optional lunch: groups can book a traditional 3 course lunch at a supplement.
Extra visits:
- Boulangerie - see a woodfired bakery and learn how to bake the delicious baguettes, croissants and patisserie of the region, in a real artisan's workshop.
- Chocolaterie - get vats of chocolate and an explanation of the process from cocoa bean to the chocolate bar. The sumptuous smelling chocolate makes this visit a must.
N.B. Entry fees to visits are
not included on day trips.

Programme of Visits
Visits are a key part of the course. The sights, sounds, and smells of the bakery, market, chocolate factory and cheese farm
bring cookery vividly to life. Pupils see the traditional methods of food production. Factory production is also covered in some areas.
Pre-booking - We will book places of interest in advance.
Entrance fees - Please note that entrance fees are not included in our price.
